Hành phi vàng thơm được làm theo cách này thì đảm bảo sẽ không bị cháy khét đâu nhé! Đặc biệt lớp bột bắp phủ lên giúp hành phi giòn tan, béo ngon hơn.
Hành tím bóc bỏ vỏ cho vào ngăn mát tủ lạnh (để khi thái không bị cay mắt). Lấy hành tím ra bào mỏng. Trải ra khay phơi nắng khoảng 2 tiếng cho hành hơi héo. Cho nước cốt chanh vào hành trộn trước. Sau đó cho 50g bột bắp vào trộn đều.
Đun nóng nhiều dầu ăn, cho hành vào phi với lửa vừa. Trong khi phi thì cứ thỉnh thoảng đảo nhẹ cho hành vàng đều. Khi thấy hành có màu vàng hơi nhạt là vớt ra dĩa có lót giấy thấm dầu.
Khi hành phi nguội và ráo dầu thì cho vào hũ kín bảo quản dùng dần. Không để lâu bên ngoài không khí vì nó sẽ dễ bị ỉu mềm đấy!
