Tai heo rửa sạch, chần qua nước sôi. Sau đó cho vào nồi luộc có thêm vài lát gừng. Vớt tai heo ra âu nước sôi để nguội có vài viên đá để tai heo được trắng.
Hành tím, tỏi bóc vỏ. Sả bóc lớp vỏ ngoài rửa sạch. Hành tím, tỏi, sả, ớt thái mỏng. Thịt heo nguội bớt đem thái sợi nhỏ.
Cho vào nồi gồm 300ml giấm, 300ml nước lạnh và 250g đường trắng, 200ml nước mắm, khuấy đều cho đường tan. Đặt lên bếp đun sôi sau đó để nguội.
Cho tai heo, hành tím, tỏi, sả, ớt vào âu trộn đều rồi từ từ rót phần nước mắm vào. Cho vào lọ thủy tinh đậy kín. Để khoảng 1-2 ngày là dùng được.
